Method
Pork Marinade
Prepare the Marinade
In a large bowl, combine garlic, cumin, oregano, chili powder, lime juice, orange juice, salt, and black pepper. Mix well.
Marinate the Pork
Add the cubed pork shoulder to the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
Cook the Pork
Cook the Pork
Preheat your oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover it with aluminum foil. Roast for 3 hours or until the pork is tender and easily shredded.
Shred the Pork
Remove the pork from the oven and let it cool slightly. Shred the meat using two forks.
Rice
Cook the Rice
In a medium saucepan, combine the rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed.
Beans
Prepare the Beans
In a small saucepan, heat the canned black beans over medium heat. Stir in garlic powder, cumin, and salt to taste. Cook until heated through, about 5-7 minutes.
Guacamole Salad

Warm the Tortillas
Heat the corn or flour tortillas in a skillet over medium heat for about 30 seconds per side, until warm.
