Prepare the Marinade
In a blender, combine pineapple juice, guajillo chiles (stems removed), ancho chiles (stems removed), white onion, garlic cloves, apple cider vinegar, ground cumin, dried oregano, salt, and black pepper. Blend until smooth.

Marinate the Pork
Cut the pork shoulder into large chunks and place it in a large bowl. Pour the marinade over the pork, ensuring it is well coated. Add bay leaves, cover with plastic wrap, and refrigerate for at least 4 hours or overnight for best results.

Shred the Pork
Once cooked, let the pork rest for 10 minutes. Shred the meat using two forks.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

On each tortilla, place a generous portion of the shredded pork. Top with fresh cilantro, thinly sliced radishes, and a drizzle of salsa verde.

Serve the tacos with lime wedges on the side for squeezing over the top.
