Method

Marinating and Grilling the Steak

    Marinate the Steak

    In a bowl, mix olive oil, garlic powder, cumin, salt, and black pepper. Add the flank steak and coat it evenly. Let it marinate for at least 30 minutes.

    Grill the Steak

    Preheat the grill to medium-high heat. Grill the marinated flank steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from grill and let it rest for 5 minutes.

    Slice the Steak

    After resting, slice the steak against the grain into thin strips.

Preparing the Toppings

    Sauté the Onions

    While the steak is grilling, slice the onion into thin strips. In a skillet over medium heat, add a splash of olive oil and sauté the onions until they are soft and slightly caramelized, about 5-7 minutes.

    Chop the Cilantro

    Rinse the cilantro and chop it finely. Set aside.

Assembling the Tacos

    Warm the Tortillas

    In a dry skillet or directly on the grill for about 30 seconds on each side, warm the corn tortillas until they are pliable.

    Fill the Tacos

    On each tortilla, layer the sliced steak, sautéed onions, and chopped cilantro.

    Add Toppings

    Squeeze fresh lime juice over the filled tacos, and add sour cream and salsa to taste.
