Method

Steak Preparation

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, garlic powder, cumin, salt, and black pepper. Add the flank steak and coat it well. Let it marinate for at least 30 minutes.

  2. 2

    Cook the Steak

Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium rare or until desired doneness. Remove from heat and let it rest before slicing.

Rice and Beans Preparation

  1. 3

    Cook the Rice

In a saucepan, bring chicken broth to a boil. Add the white rice, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.

  2. 4

    Prepare the Beans

Rinse the canned black beans under cold water. In a small saucepan, combine the beans with cilantro and lime juice. Heat over low until warmed through, about 5 minutes.

Salsa Preparation

  1. 5

    Make the Salsa

Chop the tomatoes, red onion, and jalapeño. In a bowl, combine these ingredients with fresh cilantro, lime juice, and salt to taste. Mix well and set aside.

Burrito Assembly

  1. 6

    Assemble the Burritos

Lay a large flour tortilla flat. In the center, add a portion of rice, black beans, sliced steak, salsa, shredded cheese, and a dollop of sour cream. Fold the sides of the tortilla inwards, then roll it up from the bottom to secure the filling.

  2. 7

    Serve

Repeat the assembly for all tortillas. Serve warm with additional salsa and sour cream on the side.
