Rinse the Rice
In a fine mesh strainer, rinse the long-grain white rice under cold running water until the water runs clear. This helps to remove excess starch.

Soak the Rice
In a medium bowl, combine the rinsed rice and 4 cups of water. Add the cinnamon stick. Let the mixture soak for at least 4 hours or overnight for best results.

Strain the Horchata
Using a fine mesh strainer or cheesecloth, strain the blended mixture into a large bowl or pitcher. Press down with a spoon to extract as much liquid as possible. Discard the solids.
Serving

Serve and Garnish
Pour the horchata into glasses over ice. Sprinkle with ground cinnamon on top for garnish. Serve chilled and enjoy!
