Add the ground beef or shredded chicken to the skillet. Cook until the meat is browned and cooked through.

Stir in cumin, chili powder, salt, and pepper. Mix thoroughly and remove from heat.

Stir in the shredded cheddar cheese until melted and well combined.
Assembling

Fill the Tortillas
Warm the corn tortillas slightly in a dry skillet or microwave to make them pliable.

Place about 2 tablespoons of the filling mixture in the center of each tortilla.

Roll the tortilla tightly around the filling and secure with a toothpick if necessary.
Cooking

Fry the Flautas
In a deep frying pan, heat the vegetable oil over medium-high heat.

Once the oil is hot, carefully add the rolled flautas to the oil, a few at a time, to avoid overcrowding.

Fry until golden brown and crispy, about 2-3 minutes per side.

Remove the flautas from the oil and drain on paper towels.
