Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, mix together olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. This is your marinade.

  2. 2

    Marinate the Proteins

Place the chicken breast and steak in a resealable bag or shallow dish. Pour the marinade over the proteins, ensuring they are well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Cooking

  1. 3

    Cook the Proteins

Preheat a grill or grill pan over medium-high heat. Remove the proteins from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side or until cooked through (internal temperature should be 165°F). Grill the steak for about 4-5 minutes per side for medium-rare (130-135°F), adjusting time for desired doneness. Remove from the grill and let rest for a few minutes before slicing.

  2. 4

    Sauté the Vegetables

While the proteins are resting, slice the bell peppers and onion into thin strips. In a large skillet, add a little olive oil and heat over medium-high heat. Add the sliced vegetables and sauté for about 5-7 minutes until they are tender and slightly charred.

Serving

  1. 5

    Assemble the Fajitas

Slice the grilled chicken and steak into thin strips. Serve them with the sautéed vegetables on warm flour tortillas. Add desired toppings such as sour cream, shredded cheese, guacamole, and fresh cilantro.
