Method

Salad Preparation

  1. 1

    Prepare the Salad Base

In a large bowl, chop the romaine lettuce into bite-sized pieces. Halve the cherry tomatoes, slice the red onion thinly, and add them to the bowl. Drain and rinse the black beans and corn, then add them as well.

  2. 2

    Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Dice the avocado into small cubes and set aside.

Fajita Chicken Preparation

  1. 3

    Cook the Chicken and Veggies

In a skillet, heat the olive oil over medium heat. Season the chicken breast with fajita seasoning and add it to the skillet. Cook for about 6-7 minutes on each side or until fully cooked. Remove from the skillet and let it rest.

  2. 4

    Sauté the Vegetables

In the same skillet, add the sliced bell pepper and zucchini. Sauté for about 5-6 minutes until tender. Remove from heat and set aside.

  3. 5

    Slice the Chicken

Once the chicken has rested, slice it into thin strips.

Taco Dressing Preparation

  1. 6

    Mix the Dressing

In a bowl, combine Greek yogurt, lime juice, cilantro, garlic powder, salt, and pepper. Whisk together until smooth.

Assembly

  1. 7

    Assemble the Salad

In a large serving bowl, combine the salad base with the cooked chicken, sautéed vegetables, and diced avocado. Drizzle the taco dressing over the top and toss gently to combine.

  2. 8

    Add Toppings

Top the salad with tortilla chips, shredded cheese, and dollops of sour cream to taste.
