Preparation

    Marinate the Protein

    If using chicken breast, slice it into thin strips. If using steak, cut it into thin slices against the grain. In a bowl, combine the protein with fajita seasoning, salt, and black pepper. Let it marinate for at least 15 minutes.

    Chop Vegetables

    While the protein is marinating, slice the bell peppers and onion into thin strips.

Cooking

    Cook the Protein

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the marinated chicken or steak and cook until fully cooked through and slightly charred, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onion. Sauté until they are softened and slightly caramelized, about 3-5 minutes. Remove from heat.

Assembling

    Assemble Quesadilla

    On one half of each flour tortilla, layer half of the cooked protein, half of the sautéed veggies, and 1 cup of shredded cheese. Fold the tortilla over to cover the filling.

    Cook Quesadilla

    Wipe the skillet clean and return it to medium heat. Place the assembled quesadilla into the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Serving

    Serve

    Remove the quesadilla from the skillet and let it cool slightly before cutting it into wedges. Serve with salsa, sour cream, or guacamole on the side.
