    Prepare the Filling

    In a mixing bowl, combine shredded cooked chicken, finely chopped onion, chopped cilantro, salt, and pepper. Mix until well combined.

Green Sauce Preparation

    Make the Green Sauce

    In a pot, combine the tomatillos, jalapeño pepper, minced garlic, and quartered onion. Cover with water and bring to a boil. Reduce heat and simmer for about 10 minutes until tomatillos are tender. Drain and let cool slightly.

    Blend the Sauce

    Transfer the cooked tomatillos and other ingredients to a blender. Add chopped cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning if necessary.

Assembly and Baking

    Assemble the Enchiladas

    Preheat the oven to 375°F (190°C). Heat the corn tortillas in a dry skillet or microwave until warm and pliable. Spoon about 2-3 tablespoons of the chicken filling onto each tortilla, roll them up, and place seam-side down in a baking dish.

    Top with Sauce and Cheese

    Pour the green sauce evenly over the rolled enchiladas. Sprinkle crumbled cheese on top.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and slightly golden.
