Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Filling
In a large bowl, combine the shredded chicken, shredded cheese, chopped onion, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are combined.

Fill the Tortillas
Take a corn tortilla and place about 2-3 tablespoons of the filling mixture in the center. Roll the tortilla tightly around the filling and place seam-side down in a greased baking dish.

Repeat the Process
Continue filling and rolling the tortillas until all the filling is used up. You should have approximately 12 enchiladas.

Add Sauce
Pour the enchilada sauce evenly over the top of the rolled enchiladas in the baking dish.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve
Remove the enchiladas from the oven and let them cool for a few minutes. Serve topped with sour cream, fresh cilantro, and sliced olives as desired.
