Dough Preparation

Combine Ingredients
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and immediately stir in 1 cup of all-purpose flour until the mixture forms a ball.

Cool and Add Eggs
Allow the dough to cool for about 5 minutes, then add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Combine Sugar and Cinnamon
In a small bowl, mix together 1 cup of granulated sugar and 2 teaspoons of ground cinnamon until well combined. Set aside.

Pipe Churros
Using a piping bag fitted with a star tip, pipe strips of dough (about 4-6 inches long) directly into the hot oil. Be careful not to overcrowd the pan.

Fry Until Golden
Fry the churros for about 2-3 minutes on each side, or until they are golden brown. Use a slotted spoon to remove them from the oil and drain on paper towels.
