Simmer for about 15 minutes or until the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for an additional 5 minutes.

    While the quinoa is cooking, choose 3 vegetables from the vegetable options. For instance, chop 1 cup of bell peppers, 1 cup of cherry tomatoes, and 1 cup of cucumber into bite-sized pieces. Place the chopped vegetables in a large mixing bowl.

    Choose 1 protein option. If using grilled chicken, slice 1 cup into strips. If using chickpeas, rinse and drain 1 cup from a can. If using tofu, press to remove excess moisture and cube 1 cup. Add the chosen protein to the mixing bowl with the vegetables.
