Chimichanga Preparation

Cook the Filling
In a skillet, heat olive oil over medium heat. Add the chopped beef or shredded chicken, ground cumin, chili powder, salt, and black pepper. Cook for about 5-7 minutes until the meat is heated through and well combined with the spices.

Assemble the Chimichangas
Take a flour tortilla and place about 1/2 cup of the meat mixture in the center. Sprinkle 2 tablespoons of shredded cheese over the filling. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a sealed chimichanga. Repeat with remaining tortillas.

Deep Fry the Chimichangas
In a large pot or deep fryer, heat enough oil to submerge the chimichangas (about 2-3 inches deep) to 350°F (175°C). Carefully place the chimichangas in the hot oil, a few at a time, and fry for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Plate the Dish
On a large plate, serve the chimichangas topped with cheese sauce. Add cooked rice, refried beans, and garnish with shredded lettuce, sour cream, guacamole, and diced tomatoes on the side.
