Preparing the Filling

    Cook the Meat

    In a skillet over medium heat, add the chopped beef or shredded chicken. Season with salt, black pepper, cumin, garlic powder, and onion powder. Cook until heated through and flavors are combined, about 5-7 minutes. Remove from heat.

    Prepare the Tortillas

    Warm the flour tortillas in a dry skillet or microwave for about 10 seconds to make them pliable. This will help prevent tearing when filling.

Assembling the Chimichangas

    Fill the Tortillas

    Lay a warm tortilla flat on a clean surface. Place about 1/2 cup of the meat filling in the center. Sprinkle with a generous amount of shredded cheese.

    Roll the Tortillas

    Fold in the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Repeat this process for the remaining tortillas.

Frying the Chimichangas

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

    Fry the Chimichangas

    Carefully place the rolled chimichangas seam-side down into the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove from oil and place on paper towels to drain excess oil.

Serving the Chimichangas

    Place the fried chimichangas on a serving platter. Top each with shredded lettuce, a dollop of sour cream, a scoop of guacamole, and diced tomatoes.
