Steak Preparation

    Marinate the Steak

    In a bowl, combine olive oil, garlic powder, chili powder, salt, and black pepper. Mix well.

    Coat the Steak

    Add the flank or skirt steak to the marinade. Ensure the steak is evenly coated. Cover and let it marinate for at least 30 minutes (or up to 2 hours for better flavor).

    Grill the Steak

    Preheat your grill over medium-high heat. Once hot, place the marinated steak on the grill. Grill for about 4-5 minutes on each side, or until it reaches your desired doneness (medium rare is about 130°F).

    Rest the Steak

    Once grilled, remove the steak from the grill and let it rest for 5 minutes before slicing it against the grain into thin strips.

    Cook the Onions

    In a skillet over medium heat, add a small amount of olive oil. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes.

    Warm the Tortillas

    In a separate pan or directly on the grill, warm the corn tortillas for about 30 seconds on each side until they are pliable.

    Assemble the Tacos

    Take a warm tortilla, add a few strips of grilled steak, some sautéed onions, and a sprinkle of chopped cilantro. Repeat with remaining tortillas and filling.
