Filling Preparation

Cook the meat
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

Add meat and spices
Add the ground beef or shredded chicken to the skillet. Stir in the cumin, chili powder, salt, and black pepper. Cook until the meat is browned and cooked through, about 5-7 minutes.

Set filling aside
Once cooked, remove the skillet from heat and set the filling aside.
Sauce Preparation

Combine sauce ingredients
In a saucepan over medium heat, combine the tomato sauce, broth, chili powder, garlic powder, salt, and black pepper. Stir well.

Simmer the sauce
Bring the sauce to a simmer and let it cook for about 10 minutes, stirring occasionally.
Assembly and Baking

Preheat the oven
Preheat your oven to 180°C (350°F).

Fill tortillas
Take a corn tortilla and place a spoonful of the meat filling in the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish.

Repeat filling
Repeat the process with the remaining tortillas and filling until the dish is full.

Pour sauce over enchiladas
Once all tortillas are filled and in the dish, pour the prepared sauce evenly over the top of the enchiladas.

Add cheese
Sprinkle the shredded cheese generously over the top of the enchiladas.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Garnish and serve
Remove from the oven and let cool slightly. Garnish with chopped cilantro if desired before serving.
