Preparation

    Prepare the Ingredients

    Finely chop the onion, jalapeño pepper, and garlic. Set aside.

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula until it’s browned and fully cooked. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion, jalapeño, and garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent.

    Combine Cheese with Chorizo

    Reduce heat to low, then add the Monterey Jack cheese, Queso Blanco cheese, and cream cheese to the skillet with the sautéed vegetables. Stir until the cheeses are melted and combined.

    Add Chorizo

    Return the cooked chorizo to the skillet and mix it into the melted cheese mixture until evenly distributed.

Serving

    Serve the Queso Fundido

    Transfer the queso fundido to a serving dish. Garnish with fresh cilantro and serve with lime wedges on the side. Provide warm corn tortillas for dipping.
