Churro Dough Preparation

Boil Water Mixture
In a medium saucepan, combine 1 cup of water, 2 tablespoons of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once the water mixture is boiling, remove it from heat and stir in 1 cup of all-purpose flour until a dough forms. Let it cool for about 5 minutes.

Incorporate Eggs
Add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat Oil
In a deep frying pan, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Mix Sugar and Cinnamon
In a small bowl, combine 1 cup of granulated sugar with 2 tablespoons of ground cinnamon. Set aside.
Frying Churros

Pipe the Dough
Transfer the churro dough into a piping bag fitted with a large star tip. Once the oil is hot, carefully pipe 4-6 inch strips of dough directly into the hot oil.

Fry the churros in batches for about 2-3 minutes on each side, or until golden brown and crispy.
