Preparation of Potatoes
Cut the Potatoes
After peeling, cut each potato into thin strips, about 1/4 inch thick. Try to keep the size uniform for even cooking.
Soak the Potatoes
Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and leads to crispier fries.
Cooking the Fries
Dry the Potatoes
After soaking, drain the potatoes and lay them out on a clean kitchen towel or paper towels. Pat them dry to remove excess moisture.
Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature to ensure proper frying.
Fry the Potatoes
Carefully add a batch of dried potato strips to the hot oil. Do not overcrowd the pot. Fry for about 5-7 minutes, or until golden brown and crispy.
Repeat
Repeat the frying process with the remaining potato strips until all have been cooked.
