Method
Preparing the Chicken
Prepare the Chicken
Pound the chicken breasts to about 1/2 inch thickness. This helps them cook evenly.
Season the Chicken
Season both sides of the chicken breasts with salt and black pepper.
Set Up Breading Station
Prepare three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs.
Bread the Chicken
Dredge each chicken breast in flour, shaking off excess. Dip in the beaten eggs, then coat with bread crumbs, pressing gently to adhere.
Cooking the Chicken
Heat the Oil
In a large skillet, heat olive oil over medium heat.
Fry the Chicken
Add the breaded chicken breasts to the skillet. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Dish
Preheat Oven
Preheat your oven to 400°F (200°C).
Layer the Ingredients
In a baking dish, place the fried chicken cutlets. Top each cutlet with marinara sauce, shredded mozzarella, and a sprinkle of grated parmesan.
Bake the Chicken
Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.
Garnish and Serve
Remove from oven and garnish with fresh basil leaves. Serve hot with additional marinara sauce on the side.
