Prepare the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic powder, ground cumin, salt, and black pepper. Cook for another minute, then remove from heat.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Take a corn tortilla, place about 1/4 cup of shredded cheese and a spoonful of the onion mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat with remaining tortillas.

Add Enchilada Sauce
Pour the enchilada sauce evenly over the rolled tortillas, ensuring they are well covered. Sprinkle any remaining cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

Remove from the oven, let cool for a few minutes, then serve hot with your favorite toppings such as sour cream, cilantro, or avocado.
