    Clean the Portobello Mushrooms

    Using a damp cloth, gently wipe the Portobello mushrooms to remove any dirt or debris.

    Carefully remove the stems from the mushrooms and chop them finely. Set aside for the stuffing.

    Marinate Mushrooms

    In a bowl, mix olive oil, balsamic vinegar, minced garlic (from the whole garlic cloves), salt, and black pepper. Brush this mixture onto both sides of the mushrooms and allow them to marinate for at least 15 minutes.

    In a mixing bowl, combine cream cheese, chopped spinach, grated Parmesan cheese, chopped sun-dried tomatoes, chopped mushroom stems, toasted pine nuts, and Italian seasoning. Mix well until all ingredients are evenly incorporated.

    Preheat your oven to 375°F (190°C). Take the marinated Portobello mushrooms and fill each cap generously with the stuffing mixture.
