Method
Prepare the Yuca
- 1
Peel and Cut
Start by peeling the yuca with a vegetable peeler. Cut it into large chunks.
- 2
Boil
Bring a pot of salted water to a boil. Add the yuca chunks and cook for about 20-25 minutes until tender.
- 3
Drain and Cool
Drain the yuca and let it cool for a few minutes until it's cool enough to handle.
- 4
Form and Cook Tostadas
- 5
Shape
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Shape the mashed yuca into flat circles, about ¼ inch thick.
- 6
Bake
Place the yuca circles on the baking sheet. Bake for 25-30 minutes or until they are golden and crispy.
Assemble Tostadas
- 7
Top with Refried Beans
Once the tostadas are ready, spread a layer of refried black beans on each yuca toast.
- 8
Add Toppings
Top each tostada with sliced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
- 9
Finish
Drizzle with lime juice, sprinkle crumbled feta cheese on top, and add hot sauce to taste.
