Prepare the Beef Filling

In a skillet over medium heat, add the ground beef. Cook until browned, approximately 5-7 minutes.

Add Vegetables and Spices

Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent. Then add cumin, chili powder, salt, and black pepper. Stir well to combine and cook for an additional 3-4 minutes.

Warm the Tortillas

In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side, until pliable.

Assemble the Tacos

Place a spoonful of the beef mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, cheddar cheese, and a dollop of sour cream.

Prepare the Salsa Ingredients

Dice the tomatoes, onion, and jalapeño. Chop the cilantro finely.

Mix the Salsa

In a bowl, combine the diced tomatoes, onion, jalapeño, and cilantro. Squeeze the lime juice over the mixture and season with salt to taste. Mix well.

Allow the salsa to sit for at least 15 minutes to let the flavors meld together.
