Prepare the Beef
Cut the beef chuck roast into large chunks and season with salt and black pepper.

Sear the Beef
In a large skillet over medium-high heat, add a little oil and sear the beef chunks on all sides until browned. This should take about 5-7 minutes.

Cook the Beef
Transfer the seared beef to a slow cooker. Add chopped onion, minced garlic, chipotle peppers, cumin, oregano, beef broth, and lime juice. Stir to combine.

Slow Cook
Cover the slow cooker and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.

Warm the Tortillas
In a dry skillet, warm the corn tortillas one at a time over medium heat for about 30 seconds on each side until pliable.

Shred the Beef
Once the beef is cooked, remove it from the slow cooker and shred it with two forks.

Serve tacos with lime wedges on the side for squeezing over the top.
