Marinating the Pork

Prepare the Marinade
In a blender, combine pineapple juice, chipotle peppers, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.

Marinate the Pork
Cut the pork shoulder into chunks and place them in a large bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Once cooked, let the pork rest for 10 minutes, then slice it thinly against the grain.

Assemble Tacos
Warm the corn tortillas on the grill or in a skillet. Place sliced pork on each tortilla, then top with diced pineapple, chopped onion, and cilantro. Serve with lime wedges on the side.
