Method

Marinating the Pork

  1. 1

    Prepare the Marinade

In a blender, combine pineapple juice, chipotle peppers, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.

  2. 2

    Marinate the Pork

Cut the pork shoulder into chunks and place them in a large bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

  1. 3

    Cook the Pork

Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade and grill or sear in the skillet until cooked through and slightly charred, about 10-15 minutes per side.

  2. 4

    Rest and Slice

Once cooked, let the pork rest for 10 minutes, then slice it thinly against the grain.

Assembly

  1. 5

    Prepare Toppings

While the pork is resting, prepare your toppings by dicing the pineapple, chopping the onion, and cilantro.

  2. 6

    Assemble Tacos

Warm the corn tortillas on the grill or in a skillet. Place sliced pork on each tortilla, then top with diced pineapple, chopped onion, and cilantro. Serve with lime wedges on the side.
