Prepare the Sopes

Mix the Dough
In a large mixing bowl, combine masa harina and salt. Gradually add water while mixing with your hands until a smooth dough forms.

Shape the Sopes
Divide the dough into 8 equal portions. Roll each portion into a ball and then flatten it to form a small disc about 1/2 inch thick. Use your fingers to pinch the edges, creating a raised border around the disc.

Cook the Sopes
Heat vegetable oil in a skillet over medium heat. Cook each sope for about 2-3 minutes on each side until lightly golden brown.
Prepare the Filling

Sauté the Aromatics
In a separate pan, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

Add the Meat
Stir in the shredded chicken, beef, or tongue, along with the diced tomato, cilantro, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through.
Assemble the Sopes

Fill the Sopes
Place a generous amount of the meat filling onto each cooked sope.

Top each sope with crumbled queso fresco, sour cream, salsa verde, and sliced radishes.
