Method

Preparation

  1. 1

    Prepare the Seafood

In a large bowl, combine the shrimp, mussels, clams, and fish fillet. Set aside.

  2. 2

    Chop the Vegetables

Chop the onion, garlic, tomatoes, bell pepper, carrot, and celery into small, uniform pieces for even cooking.

Cooking

  1. 3

    Sauté Vegetables

In a large pot, heat a splash of oil over medium heat. Add the chopped onion, garlic, bell pepper, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

  2. 4

    Add Tomatoes and Spices

Add the diced tomatoes, bay leaves, thyme, paprika, salt, and pepper to the pot. Stir well and cook for another 5 minutes.

  3. 5

    Pour in Liquids

Add the fish stock, white wine, and water to the pot. Bring the mixture to a boil.

  4. 6

    Add Seafood

Once the broth is boiling, add the prepared seafood to the pot. Reduce the heat to a simmer and cook for about 10-15 minutes, or until the seafood is cooked through.

  5. 7

    Finish and Serve

Taste the soup and adjust seasoning with salt and pepper if necessary. Remove bay leaves. Serve hot in bowls, garnished with chopped fresh parsley.
