Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set it aside.

Prepare the Sauce
While the pasta cooks, chop the pancetta into small pieces and mince the garlic. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream until well combined. Season with salt and black pepper.

Cook the Pancetta
In a large skillet over medium heat, add the chopped pancetta and cook until crispy, about 5-7 minutes. Add the minced garlic for the last minute of cooking, stirring frequently to prevent burning.

Taste and adjust seasoning with additional salt and black pepper. Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper if desired.
