Prepare the Ingredients

    Chop and Dice

    Dice the tomato and finely chop the onion and cilantro. Set aside.

    Prepare Avocado

    Slice the avocado and set aside for serving.

Cook the Eggs

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat until shimmering.

    Cook the Eggs

    Crack the eggs into the skillet. For scrambled eggs, stir gently until cooked through. For sunny-side up, cook undisturbed until the whites are set. For ranchero style, scramble the eggs and cook until just set.

    Season the Eggs

    Season the eggs with salt and black pepper to taste.

Assemble the Dish

    Add Toppings

    Once the eggs are cooked, transfer them to a plate and top with diced tomatoes, chopped onions, and cilantro.

    Place sliced avocado on top or on the side of the eggs.

    Sprinkle crumbled queso fresco over the top of the dish.
