Preparation of Fish

    Cut the Fish

    Cut the fresh white fish into small, bite-sized cubes (about 1/2 inch).

    Marinate the Fish

    In a bowl, combine the fish cubes with lime juice and lemon juice. Ensure that the fish is completely submerged in the citrus juices. Cover the bowl and refrigerate for about 30 minutes to 1 hour, or until the fish turns opaque and appears 'cooked' by the citrus.

    Chop the Vegetables

    While the fish is marinating, finely chop the red onion, cilantro, tomato, and cucumber. If using, finely chop the jalapeño as well.

Combining Ingredients

    Mix the Ingredients

    After the fish has marinated, drain off excess citrus juice. Add the chopped vegetables (red onion, cilantro, tomato, cucumber, and jalapeño) to the fish. Season with salt and black pepper.

    Toss and Serve

    Gently toss all ingredients together until well combined. Serve immediately in a chilled bowl or on a plate, garnished with additional cilantro if desired.
