Calamari Preparation

Clean and Cut Calamari
Clean the fresh calamari by removing the head and innards. Rinse under cold water. Cut the calamari into rings about 1/2 inch thick.

Prepare Breading Mixture
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Bread the Calamari
Dip each calamari ring first in the egg wash, then dredge in the flour mixture, ensuring each piece is well coated.

Fry Calamari
Carefully place the breaded calamari rings in the hot oil in batches, avoiding overcrowding. Fry for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasoning
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, sugar, red pepper flakes, and black pepper. Bring to a simmer.

Simmer Sauce
Reduce the heat to low and let the sauce simmer for 20-25 minutes, stirring occasionally, until it thickens slightly.
