Preparation
- 1
Cooking the Rice
In a medium pot, bring 4 cups of water to a boil. Add 2 cups of rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the water is absorbed.
- 2
Cooking the Meat
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 cup of ground beef, season with salt and pepper, and cook until browned, about 6-8 minutes. Drain excess fat if necessary.
- 3
Heating the Beans
In a small saucepan, heat 1 cup of black beans over medium heat until warmed through, about 5 minutes. Stir occasionally.
- 4
Preparing the Tortillas
Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
Assembly
- 5
Assembling the Burrito
On each tortilla, layer 1/2 cup of cooked rice, 1/4 cup of black beans, 1/4 cup of ground beef, 1/4 cup of shredded cheddar cheese, 2 tablespoons of sour cream, and a few tablespoons of salsa. Add a handful of lettuce for crunch.
- 6
Rolling the Burrito
To roll, fold in the sides of the tortilla and then roll from the bottom up, making sure to keep the filling secure. Repeat with the remaining tortillas.
