Prepare the Ingredients

    Chop the Vegetables

    Dice the bell pepper, mushrooms, onion, and tomato. Roughly chop the spinach.

    Cook the Protein

    In a skillet over medium heat, cook the chosen protein (bacon, ham, or turkey) for about 3-4 minutes until browned and crispy, then remove and set aside.

Make the Omelette

    Whisk Eggs

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Sauté Vegetables

    In the same skillet, add a little oil if necessary, and sauté the chopped bell pepper, onion, and mushrooms for about 2-3 minutes until softened. Add the spinach and tomato, sautéing for an additional minute.

    Combine and Cook

    Pour the egg mixture into the skillet over the sautéed vegetables, tilting the pan to spread the eggs evenly. Cook for about 3-4 minutes on medium heat until the edges start to set.

Finish the Omelette

    Add Protein

    Once the omelette is mostly set, add the cooked protein on one half of the omelette.

    Fold and Serve

    Carefully fold the omelette in half over the protein. Cook for an additional minute, then slide onto a plate.

    Toast the bread slices until golden brown and serve with berry jam on the side.
