Cheesecake Bites

Prepare the Cheesecake Mixture
In a mixing bowl, beat the cream cheese until smooth. Add granulated sugar and vanilla extract, mixing until well combined.

Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just blended. Do not overmix.

Assemble the Cheesecake Bites
Preheat the oven to 325°F (160°C). Line a mini muffin tin with paper liners. Press a small amount of the graham cracker mixture into the bottom of each liner, then fill with the cheesecake mixture.

Bake
Bake for 15-18 minutes or until the centers are set. Remove from the oven and let cool completely.
Cream Cheese Frosting

Prepare Frosting
In a mixing bowl, combine the cream cheese and unsalted butter. Beat until creamy and smooth.

Add Sugar and Vanilla
Gradually add powdered sugar and vanilla extract, mixing until well combined and fluffy.
Strawberry Purée

Prepare Strawberries
In a blender, combine fresh strawberries, sugar, and lemon juice. Blend until smooth and well combined.

Strain (Optional)
If a smoother consistency is desired, strain the mixture through a fine-mesh sieve to remove seeds.
Assembly

Assemble the Dessert
Once the cheesecake bites are completely cool, pipe or spread the cream cheese frosting on top of each bite.

Add Strawberry Purée
Drizzle the strawberry purée over the frosted cheesecake bites.

Garnish
Top each cheesecake bite with a fresh strawberry for garnish.
