    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add chopped onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes. Then, add sliced mushrooms and cook until they are browned, about 5 minutes.

    Add Spinach

    Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir well to combine with the mushrooms and onions.

Making the Cream Sauce

    Prepare the Sauce

    Pour in the heavy cream and bring to a simmer. Stir continuously to avoid burning. Allow the sauce to thicken slightly, about 3-4 minutes. Season with salt and black pepper to taste.

    Slice the cooked chicken and add it back into the skillet with the cream sauce and vegetables. Stir to coat the chicken evenly in the sauce and heat through for an additional 2-3 minutes.
