Activate Yeast
In a small bowl, combine 1/2 cup of warm water (about 110°F) with the sugar and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes foamy.

Mix Dough
In a large mixing bowl, combine the bread flour and salt. Make a well in the center and pour in the yeast mixture along with the remaining water and honey. Stir until a dough forms.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape Bagels
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole through the center with your finger and stretch it to form a bagel shape.

Place the shaped bagels on a parchment-lined baking sheet, cover with a cloth, and let them rise for another 30 minutes.

Bake Bagels
Preheat your oven to 425°F (220°C). Place the boiled bagels on a baking sheet and sprinkle with everything seasoning if desired. Bake for 20-25 minutes until golden brown.
