Salad Preparation

Prepare the Salad Base
Wash and dry the Romaine lettuce thoroughly. Tear it into bite-sized pieces and place it in a large salad bowl.

Add Vegetables
Slice the cherry tomatoes in half and chop the cucumber into small cubes. Add them to the bowl with the Romaine lettuce.
Dressing Preparation

Prepare the Dressing
In a mixing bowl, mash the garlic and anchovy fillets together until smooth. Add the egg yolks, Dijon mustard, and lemon juice, and whisk until combined.

Add Olive Oil
While whisking continuously, slowly drizzle in the olive oil until the dressing is emulsified and creamy.

Season the Dressing
Grate the Parmesan cheese and mix it into the dressing. Season with salt and black pepper to taste.
Crouton Preparation

Make the Croutons
Preheat the oven to 375°F (190°C). Cut the bread into small cubes and place them in a bowl.

Bake the Croutons
Spread the bread cubes on a baking sheet and bake for about 10-15 minutes or until golden brown, tossing halfway through.

Drizzle the prepared dressing over the salad base and toss gently to combine, ensuring all ingredients are coated.

Top the salad with the baked croutons and serve immediately, garnished with additional Parmesan cheese if desired.
