Method
Pasta Preparation
Cook the Fettuccine
In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente.
Drain the Pasta
Once cooked, drain the pasta and set aside. Reserve a cup of pasta water for later use.
Chicken Preparation
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and black pepper, then add them to the skillet.
Sauté the Chicken
Cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from skillet and let rest.
Slice the Chicken
Once rested, slice the chicken into strips.
Alfredo Sauce Preparation
Add Cream and Cheese
Pour in the heavy cream and bring to a simmer. Gradually whisk in the grated Parmesan cheese until melted and smooth.
Season the Sauce
Add nutmeg, salt, and black pepper to taste. If the sauce is too thick, add reserved pasta water to reach desired consistency.
Combine and Serve
Combine Pasta and Sauce
Add the drained fettuccine to the Alfredo sauce and toss to coat evenly.
Add Chicken
Place the sliced chicken on top of the pasta and sauce mixture.
Garnish and Serve
Garnish with chopped parsley and serve immediately.
