Preparation
Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch. This helps the chicken cook evenly.
Season the Chicken
In a shallow dish, combine the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off excess.
Cooking
Cook the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the Sauce
In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until fragrant. Stir in the lemon juice and chicken broth, scraping up any brown bits from the bottom of the skillet.
Add Capers
Add the drained capers to the sauce and let it simmer for about 3-4 minutes until slightly reduced.
Combine Chicken and Sauce
Return the cooked chicken to the skillet, spooning the sauce over the chicken. Cook for an additional 2 minutes to heat through.
