Method

Pasta Preparation

  1. 1

    Cook the Manicotti

Bring a large pot of salted water to a boil. Add the manicotti shells and cook until al dente, about 6-8 minutes. Drain and set aside to cool.

Filling Preparation

  1. 2

    Prepare the Filling

In a large mixing bowl, combine cream cheese, ricotta cheese, fresh spinach (sautéed until wilted), shrimp (lightly cooked and chopped), crab meat, salt, black pepper, garlic powder, and half of the grated Parmesan cheese. Mix thoroughly until all ingredients are well combined.

Assembly

  1. 3

    Stuff the Manicotti

Using a piping bag or a spoon, carefully fill each manicotti shell with the seafood filling. Place the stuffed shells in a greased baking dish.

Sauce Preparation

  1. 4

    Add Vodka Sauce

Pour the vodka sauce evenly over the stuffed manicotti. Sprinkle the remaining grated Parmesan cheese over the top.

Baking

  1. 5

    Bake the Manicotti

Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.

Serving

  1. 6

    Garnish and Serve

Remove the manicotti from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
