Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes.

Prepare the Pancetta
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat and set aside, leaving the rendered fat in the skillet.

Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Combine Ingredients
Once the pasta is cooked, reserve about 1 cup of the pasta water and drain the rest. Immediately add the hot pasta to the skillet with pancetta (off the heat), and quickly pour the egg and cheese mixture over the pasta. Toss vigorously to combine, adding reserved pasta water a little at a time to create a creamy sauce. The heat from the pasta will cook the eggs without scrambling them.

Season and Serve
Taste and season with salt as needed. If desired, sprinkle with fresh parsley before serving. Serve immediately with additional Parmesan cheese and black pepper on the side.
