Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5 minutes to bloom.

Heat the Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir occasionally until the sugar dissolves and the mixture is hot but not boiling.

Add the Gelatin and Vanilla
Remove the saucepan from heat. Add the bloomed gelatin and vanilla extract, stirring until the gelatin is completely dissolved.

Pour into Molds
Pour the mixture into individual serving molds or glasses. Allow it to cool to room temperature, then cover and refrigerate for at least 4 hours or until set.
Berry Compote

Cook the Berries
In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Cook for about 5-7 minutes, stirring gently until the berries start to break down and the mixture thickens slightly.

Cool the Compote
Remove from heat and let the berry compote cool to room temperature. It can be served warm or chilled.
