Fried Calamari

Prepare the Calamari
In a large bowl, soak the cleaned calamari rings in buttermilk for at least 30 minutes. This helps tenderize the calamari.

Mix the Dry Ingredients
In another bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Whisk until well combined.

Dredge the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, shaking off excess flour.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

Fry the Calamari
Carefully drop a few calamari rings into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes, or until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the fried calamari and drain on paper towels. Serve immediately while hot.

Add Tomatoes and Spices
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Add chopped fresh basil towards the end of cooking.

Serve
Once the sauce has thickened slightly and flavors have melded, remove from heat and serve warm as a dipping sauce alongside the fried calamari.
