Prepare the Calamari
Clean the calamari by removing the head and innards, then slice the body into rings about 1/2 inch thick. Rinse the rings under cold water and pat dry with paper towels.

Soak in Buttermilk
Place the calamari rings in a bowl and pour the buttermilk over them. Make sure all rings are well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Breading
In a separate bowl, combine the flour, cornstarch, salt, black pepper, and paprika. Mix well until combined.

Coat the Calamari
Remove the calamari from the buttermilk, letting any excess drip off. Dredge each ring in the flour mixture, ensuring an even coating. Shake off any excess flour.

Fry the Calamari
Carefully place the breaded calamari rings in the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Transfer the crispy calamari to a serving platter and serve hot with the spicy aioli on the side.
Spicy Aioli

Mix the Ingredients
In a mixing bowl, combine the mayonnaise, minced garlic, sriracha sauce, and lemon juice. Stir until smooth and well combined.

Season
Add salt to taste, mixing thoroughly. Adjust the spiciness by adding more sriracha if desired.

Chill
Cover the aioli and refrigerate for at least 15 minutes before serving to allow the flavors to meld.
