Mousse Preparation

Melt the Chocolate
Break the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a pot of simmering water, stirring occasionally until smooth. Remove from heat and let it cool slightly.

Separate the Eggs
While the chocolate is cooling, separate the egg yolks from the egg whites. Place the yolks in a mixing bowl and the whites in a separate clean bowl.

Mix Egg Yolks and Sugar
Add granulated sugar to the egg yolks and whisk until the mixture is pale and creamy. Slowly add the melted chocolate and vanilla extract, stirring until fully combined.

Whip Egg Whites
Using a hand mixer or stand mixer, whip the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Whip Heavy Cream
In a separate bowl, whip 250 ml of heavy cream until it reaches soft peaks. Fold the whipped cream into the chocolate mixture until no streaks remain.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

Prepare Whipped Cream
In a mixing bowl, combine 100 ml of heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Serve
Once the mousse is set, top each serving with a dollop of whipped cream just before serving.
