Crust Preparation

Preheat Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Rice Cauliflower
Remove the leaves and stem from the cauliflower and cut it into florets. Place the florets in a food processor and pulse until it resembles rice or couscous.

Transfer the riced cauliflower to a microwave-safe bowl and cover with a damp paper towel. Microwave on high for 5-6 minutes until tender. Let it cool slightly, then place it in a clean kitchen towel and wring out as much moisture as possible.

In a large mixing bowl, combine the cooked cauliflower, egg, shredded mozzarella, almond flour, garlic powder, oregano, salt, and black pepper. Mix until well combined.

Transfer the mixture to the prepared baking sheet and press it into a 10-inch round shape, about 1/4 inch thick.

Drizzle the crust with olive oil, then bake in the preheated oven for 20-25 minutes or until golden brown and firm.
