Method

Preparation

  1. 1

    Season the Steak

Pat the ribeye steak dry with paper towels to remove any excess moisture. This will help achieve a nice crust while cooking. Sprinkle kosher salt, freshly ground black pepper, and garlic powder evenly over both sides of the steak. Let it rest at room temperature for about 30 minutes to allow the seasoning to penetrate the meat.

Cooking

  1. 2

    Preheat the Pan

Heat a heavy skillet, preferably cast iron, over medium-high heat. Add the olive oil and let it heat until shimmering but not smoking.

  2. 3

    Sear the Steak

Once the oil is hot, carefully place the ribeye steak in the skillet. Sear for about 4-5 minutes without moving it, allowing a crust to form on the bottom.

  3. 4

    Flip the Steak

Using tongs, flip the steak over and sear the other side for another 4-5 minutes for medium-rare doneness. Adjust the cooking time as needed for your preferred doneness.

  4. 5

    Add Garnish (Optional)

If desired, add a sprig of fresh rosemary and a couple of tablespoons of butter to the skillet during the last minute of cooking. Baste the steak with the melted butter for added flavor.

Resting

  1. 6

    Rest the Steak

Once cooked to your liking, remove the steak from the skillet and transfer it to a cutting board. Let it rest for about 5-10 minutes to allow the juices to redistribute before slicing.

Serving

  1. 7

    Slice and Serve

Slice the ribeye against the grain into thick slices. Serve immediately, optionally garnished with the pan juices and extra rosemary.
