Preparation of Ingredients

Slice the Beef
Trim any excess fat from the beefsteak and slice it thinly against the grain.

Prepare the Vegetables
Thinly slice the onion and remove the seeds and stem from the poblano pepper, then slice it into strips.
Grilling

Grill the Beef
Heat a grill or frying pan over medium-high heat. Add 1 tablespoon of olive oil. Once hot, add the sliced beef, seasoning it with salt, black pepper, and garlic powder. Cook until browned and cooked through, about 3-4 minutes. Remove from the pan and set aside.

Grill the Onions and Poblano
In the same pan, add another tablespoon of olive oil. Add the sliced onions and poblano pepper. Grill for about 5-7 minutes until they are softened and slightly charred. Remove from heat.
Assembling the Sandwich

Layer the Ingredients
On two slices of toasted Texas toast, layer the grilled beef, followed by the grilled onions and poblano, and finally top with 2 slices of Swiss American cheese. Place the other slices of toast on top.

Melt the Cheese
Return the sandwiches to the skillet over low heat, cover with a lid, and cook for 2-3 minutes until the cheese is melted and the sandwiches are heated through.
